Ingredients

2 Jumbo Sea Scallops
½ Serrano or Jalepeño Chili Pepper
2 Large Tomatillos
1 Small Bulb Onion (Divided)
1-2 Inches of an English Cucumber
Cilantro
1 Lime (Juice)
A Slight Drizzle of Olive Oil
Directions
Step 1: Blend tomatillos, cilantro, lime juice, green onion, and a serrano or jalepeño chili pepper. Make sure it is blended completely smooth.
Step 2: Take a minute to set up your garnish. You will need to slice up some onion whites, a bit more of the chili pepper of your choice, and some cucumber.
Step 3: Then, pat dry and thinly slice up your scallops. With the size of these scallops, you should be able to get at least 4-6 slices out of them. Make sure you’re using a very sharp knife.
Step 4: Pour the Aguachili sauce on the plate and start layering your ingredients. Start with cucumber slices, then your sliced scallops. Top with onion whites, sliced chili pepper, fresh cracked pepper, and a slight drizzle of olive oil.
Step 5: Serve immediately and enjoy!
