Ingredients

2 Fillets Baja Kanpachi (defrosted overnight in refrigerator)
2-3 limes
kosher salt (pinch or two)
¼ of red onion (sliced thin with mandolin)
Ice water (enough to cover sliced red onion)
1 teaspoon of white or rice wine vinegar
½-⅓ cup fresh lime juice
1 clove of garlic
1 cup cilantro
2 jalapenos (sliced in half lengthwise)
1 serrano chili (sliced in half lengthwise and deseeded)
1 tablespoon of granulated sugar
1 teaspoon of kosher salt
Aguachile Marinade:
Directions
Using a very sharp knife, thinly slice Kanpachi on the bias (perpendicular to the grain of the fish) about ⅛ inch thick or if you're familiar, a traditional sashimi slice.
Place sliced Kanpachi in a shallow ceramic or glass dish. Squeeze enough lime juice to cover all the sliced fish. Add a pinch of salt and thoroughly mix the fish with the lime juice. Cover the dish and refrigerate for 10-20 minutes depending on desired acidity.
Thinly slice the red onion and add it to the ice water with a teaspoon of salt and vinegar.
For the Aguachile Marinade, place the ingredients in a blender and blend until smooth.
Pour aguachile marinade over sliced kanpachi, drain red onions and apply on top and mix everything together. Refrigerate for at least 15 mins or for best results serve chilled.
