Baja Kanpachi Aguachile

Aguachile is much like ceviche but adds more dimension and flavor with the addition of blended jalapeno, serrano chilis and fresh cilantro. Given that the Baja Kanpachi is sashimi grade, you can control the level of desired acidity by slightly marinating in lime juice or taking it to a full 20 minutes. Either way the fish is the star of this dish.
