1 tbsp butter
1/2 cup chopped green bell pepper
1/4 cup sliced green onions
1 garlic clove, minced
3 cups tomato-vegetable juice cocktail
1 (8oz) bottle clam juice
1/2 cup water
1/4 tsp dried thyme
1/4 tsp dried basil
1/4 tsp red pepper flakes
1 bay leaf
1/2 tsp salt
1/2 cup uncooked long-grain white rice
1/2 cup whole kernel corn
1 lb Jumbo Raw Shrimp
hot sauce to taste
In a large pot, melt butter and saute bell pepper, green onions, and garlic until translucent
Add the tomato-vegetable juice, clam juice, water, corn, and rice
Next, add your spices and bay leaf.
Bring to a boil, reduce heat and simmer for 15 minutes or until rice is cooked through
Once the rice is cooked, add the shrimp and cook for 5 more minutes.
Remove bay leaf, stir in hot sauce to taste, and serve.
