Creamy Tarragon Dijon Citrus Salmon

Ingredients

2 6 oz. Salmon Filets
1/2 cup Lite Sour Cream
2 Tablespoons fresh/dried Tarragon
1 tablespoon ground black pepper
3 tablespoons Dijon Mustard
1 teaspoon Himalayan Salt
2 Tablespoons fresh Lemon juice
2 Tablespoons fresh Lime juice
1 bunch fresh Asparagus
3 tablespoons fresh garlic
1/2 chopped yellow onion
2 yellow tomato chopped
Directions
Pre-heat oven to 400 degrees
Line a baking pan or dish with foil
Mix the sour cream, citrus, tarragon, salt, pepper, Dijon Mustard, and chopped garlic in a bowl. Mix together and put into the refrigerator until ready
Lightly spray the foil lined pan with cooking spray or lightly apply 1 tablespoon olive oil or butter for non-stick purposes
Place salmon skin down in cooking dish.
Take pre-mixed sour cream mixture and apply to tops of salmon filets. Make sure the filets are generously covered. Leave some of the mixture aside.
Place Asparagus, the chopped tomato and onion beside the salmon filets and drizzle the rest of the sour cream mixture over the veggies.
Place cooking dish in the center of the oven.
Cook for 10-12 minutes or to your liking if more well done make sure to keep an eye on the fish so as to not over cook.
After cooking has completed remove from oven, plate the asparagus on the plate and rest the salmon on top.
