The honey marinade gives this dish a mild sweetness, which tastes amazingly well with baked root vegetables.

Ingredients
4 tbsp honey
Juice of 1/2 Lemon
salt and pepper to taste
2 Large Carrots, sliced
2 root parsley, sliced
1 small celeriac, diced
1/2 Rutabaga, diced
2 tbsp olive oil
salt and pepper to taste

Directions
Preheat grill to medium/high heat.
Mix the honey and the juice of half a lemon in a bowl, stir and pour over the salmon fillets. Season with salt and pepper.
Slice the carrots and root parsley and dice the celeriac and rutabaga. Place the vegetables in aluminum foil with the olive oil, salt and pepper and place under the grill. Grill for 15-20 minutes
Grill the salmon around 15 minutes.

Use any vegetables you desire!
