Kanpachi Sashimi with Citrus Ginger Sauce
Baja Kanpachi thinly sliced and glazed with a ginger citrus sauce - including orange, lemon, lime, and ponzu and sweetened with a touch of honey.
2 tbsp oil
1 2/3 tbsp ginger
2 1/4 tsp garlic
3 1/2 ounces Orange Juice
1 2/3 tbsp lemon juice
1 2/3 tbsp lime juice
1 2/3 tbsp ponzu
2 1/4 tsp honey
Citrus Ginger Sauce (yields 8 fl oz)
Slice the Kanpachi into almost paper thin coins at an angle and lay 12 slices out on medium plates. Dress the kanapchi very lightly with the citrus ginger sauce. Serve with some wasabi and pickled ginger.
