KnowSeafood's Butter Poached Branzino
Try out this incredible poached branzino dinner, created by Chef Gina!
2 Branzino Fillets
½ cup of stock
8 oz. cherry tomatoes
6 garlic cloves
1 tbsp italian seasoning
3 tbsp butter
salt and pepper
Step 1: Pat dry your fillets and season with salt and pepper.
Step 2: In a sauce pan. heat a small amount of olive oil. Just enough to cover the bottom of your pan. When it's hot, add the fillets skin side down. Cook for 1 minute on each side and remove from the pan.
Step 3: Add your butter, pressed garlic and small diced shallots and tomatoes. Cover and cook for about a minute.
Step 4: Add the stock then move the tomatoes to the side and Italian seasoning. Add in the fillets skin side up and cover. Cook covered on a low simmer for 5 minutes.
Step 5: Plate the fillets with the tomatoes and extra sauce and serve with olive oil toasted crusty bread.
Step 6: Enjoy!
