Ingredients

1 lb. of Yellowfin Tuna Poke
1 tbs soy sauce
1 tsp sesame oil
1 tsp toasted sesame seeds
1 shallot, thinly sliced
1 cup plus 1 tbsp rice vinegar
1 tsp sesame oil
1 tsp sesame seeds
1 tbsp sugar
pinch of salt
3-4 cups cooked rice of your choice (sushi rice or basmati rice)
Cucumbers, thinly sliced
Avocado
Spicy mayo (mix a bit of sriracha with japanese kewpie or other mayo to taste)
More soy sauce and/or sesame oil if desired.
Seaweed salad
For fish:
For radishes* and bok choy** (if using):
Other misc. toppings (use whatever you like and have on hand):
Directions
Toss tuna pieces in a bowl with the soy sauce, sesame oil, sesame seeds, and thinly slice shallot, set aside to marinate while rice cooks and you prep other fixings
Cook rice according to package directions and prep any additional toppings
Separate rice in bowls, top with marinated tuna
Top with any combo of additional toppings (a good combo is some sweetened soy sauce, spicy mayo, pickled radish and bok choy, with a little extra sesame seeds, but get creative!)
*How to quick pickle radishes:
Thinly slice radishes
In a small sauce pot, boil one cup of vinegar (rice or white or apple cider vinegar all work)
Add a pinch of salt and a tbsp of sugar and dissolve
Immediately pour over radishes and let sit for 15-20 min
Radishes are ready to use immediately, and can be stored in fridge for a couple of weeks.
**How to prepare bok choy
Chop into 1/2" pieces, separate tops (dark green) from bottoms (light green)
Put tops in a bowl with a tbsp of rice vinegar, tsp of sesame oil, tsp of sesame seeds and massage the greens, leave to the side to let marinate
In a skillet, warm up a splash of oil over medium heat
Add bok choy bottoms and sautee for several minutes, until they are softened and slightly charred to liking
