Ingredients

4 Cobia Burgers
4 tbsp Lemon Pepper Seasoning 4 Brioche Buns
3 oz Lettuce
1 Large Plum Tomato, sliced
2 cups diced fresh pineapple
ó cups diced fresh red bell pepper 1 cup rice wine vinegar 2 cups granulated sugar 2 tbsp Lemon Juice Kosher salt
Olive oil
Directions
For the Pineapple Chutney:
Place the sugar and the vinegar in a saucepan and bring to a boil. Add 2 tsp kosher salt, diced pineapple and diced red bell pepper. Bring back to a boil and simmer for 35 - 45 min or until the liquid is mostly evaporated and the pineapples and peppers are translucent . Make sure to stir constantly to evenly cook the pineapples and prevent from burning. The chutney can be prepared ahead of time and kept chilled for up to 4 days
For the Burgers
Rub each of the frozen burger with the olive oil and 1 tbsp of the Lemon Pepper Rub and grill on high heat for approximately 3 min on each side or until they reach an internal temperature of 145 degrees. Let rest for 3 min before serving Grill the Buns, season the tomato and lettuce with salt. Stack the burger: let tuce, tomato, burger, chutney, and drizzle the fresh lemon juice. Serve with fries.
