Shrimp & Kale Salad with Apple, Avocado and Pomegranate
1/2 lb Cold-Water Shrimp
1 pomegranate, peeled and seeds separated
1 bag of mixed baby greens, e.g. mini kale
3 tbsp olive oil
salt and pepper
Mix pomegranate seeds with lime juice, olive oil, salt and pepper.
Dice the apple and avocado and gently mix them into the dressing.
Lightly season the shrimp with salt and pepper.
Toss shrimp into the mixed greens and pour dressing over top. Finish with chives.
