Summer brings tons of zucchini. Sometimes too much, right? But instead of making another boring side dish, I decided to get creative.

What if we turned those green beauties into little boats? Better yet, what if we stuffed them with delicious crab?

This Dungeness crab recipe will make you look at zucchini in a whole new light. Your family won’t see it coming, and they’ll be asking for seconds before you know it!

Ingredients for Making Crab-Stuffed Zucchini Boats

Getting your ingredients ready is half the fun! I love how simple this list is. You probably have most of these things sitting in your kitchen right now.

And you don’t need any fancy stuff to make these boats sail smoothly into dinner success.

Look for straight ones that won’t tip over

Fresh crab meat

1 cup

Canned works too – just drain it well

Cream cheese

4 oz

Room temperature makes mixing easier

Shredded mozzarella

1/4 cup

Panko gives the best crunch

Garlic cloves

2 pieces

Minced fresh or 1/2 tsp powder

Green onions

2 stalks

Chopped, including green parts

Lemon juice

1 tablespoon

If you can’t find fresh crab, don’t stress about it. The canned stuff works just fine, and your wallet will thank you!

The Simplest Crab-Stuffed Zucchini Boats Recipe

Time to get cooking! Just follow along, and you’ll have something that looks like it came from a restaurant.

Step 1: Prep Your Zucchini Boats

  • Preheat your oven to 400°F
  • Wash the zucchini and cut them in half lengthwise
  • Scoop out the flesh with a spoon, leaving about 1/4 inch walls
  • Save that zucchini flesh – we’ll use it!
  • Brush the boats with olive oil and season with salt

Step 2: Make the Crab Filling

  • Chop up that scooped zucchini flesh (dice it small)
  • Mix cream cheese, crab meat, and chopped zucchini in a bowl
  • Add garlic, green onions, and lemon juice
  • Season with salt and pepper
  • Fold in half the mozzarella cheese

Step 3: Stuff and Bake

  • Top with the remaining mozzarella and breadcrumbs
  • Bake for 25-30 minutes until golden and bubbly
  • Let them cool for 5 minutes before serving

How to Keep Your Crab-Stuffed Zucchini Boats from Getting Soggy

Nobody likes a soggy boat! Zucchini has lots of water, and we need to deal with that. However, don’t worry, I have some tricks that work every single time.

These tips will keep your boats crispy and your family happy.

Salt Those Boats First

Sprinkle salt on the scooped zucchini halves and let them sit for 15 minutes. This pulls out extra water. Then pat them dry with paper towels before you start stuffing.

Don’t Skip the Pre-Bake

Put your empty, oiled zucchini boats in the oven for 10 minutes before adding the filling. This head start helps cook out moisture.

Your boats will be firmer and ready to hold all that yummy crab stuff.

Drain Your Crab Well

If you’re using canned crab, drain it really well. Press it with paper towels, too. Extra water in your filling means soggy boats later. Fresh crab is usually drier, but it’s best to check it anyway.

Keep the Oven Hot

Don’t lower that temperature! High heat (400°F) helps evaporate moisture quickly. Lower heat just steams everything, making it overly soft and mushy. Trust me on this one.

Let Them Rest

After baking, let your boats sit for 5 minutes before serving. This helps everything set up properly. I know it’s hard to wait when they smell so good, but it’s worth it!
