- Boil Salted Water

- Reduce to Low Bubbling

- 3 to 5 Minutes (3-6oz Tail)

- Add 1 minute for each additional ounce

- Cool immediately in ice water

Please Note: The above guidelines are suggestions only. The average time depends on the size/amount of seafood portions. Stoves and pans also vary in performance, so check color and texture regularly to achieve perfectly cooked seafood. Please use a meat thermometer for accuracy.

Thawing frozen seafood properly is significant not only to ensure the quality of the seafood but also to prevent health risks. For example, all of our seafood has a protective glaze of water to prevent freezer burn-in to ensure quality. Once thawed, gently pat away any excess moisture from the glazing as soon as possible.

We recommend that you follow the USDA’s instructions on safe food handling, which can be found here. We also recommend that all cooking instructions are followed and that you use a food thermometer to ensure that all seafood and other applicable items are cooked to the USDA’s recommended internal temperatures, which can be found here.

Here are a few simple ways how to defrost:

The Refrigerator Method

It might be the longest, but thawing seafood in the refrigerator is undoubtedly the safest way to thaw any protein such as seafood. It also protects the quality of the seafood, providing the best quality-control method. For example, for our Individual Frozen Portions (IFP) or Individually Quick Frozen (IQF) bags like our shrimp and scallops, it can take up to 12- 24 hours to thaw. Please remove from the original package, plate, and cover, or at a minimum, puncture the plastic packaging. Once melted, seafood lasts up to three days in the original packaging. Do not refreeze after thawing.

The Water Method

Here’s how it works:

IFP Portions: Place the seafood in a bowl of cold water (not warm or hot as that starts the cooking process) in the kitchen sink. Change the water now and then or place a constant drip/spray of water to control the temperature. Check the seafood after one hour – it should be fully thawed by then. Cook immediately after thawing.

IQF bags:

Place the desired quantity of seafood (scallops/shrimp) that you will use into another resealable bag.Replace unused IQF seafood immediately back into the freezer.Submerge the sealed bag in a bowl of cold tap water.Let the bag sit in the water until it’s completely thawed, changing the water every 30 minutes, if necessary.

We don’t recommend running under cold water outside of the bag. Cook immediately after thawing.

The Microwave Method

Not always the favorite way, but it’s fast, and the microwave method is undoubtedly the quickest of the three. Still, it’s the least preferred method to preserve the seafood’s quality. But if you forgot to take it out of the freezer and are in a hurry, here’s what you do: make sure you puncture the plastic before placing it in the microwave. Use the “Defrost” function and set the time according to weight. Cook immediately after thawing.

Only From Harvesters We Trust

Sechura Bay, located on the northwestern tip of Peru, is home to one of the most interesting fisheries in the world. Each day during the harvest season, divers go out to a dedicated zone of the bay and dive around 10-16 feet to hand pick our delicate sweet scallops right off the bay floor.

Without impacting the environment, our harvesters work meticulously to pick the best scallops to fill their daily quota. Once the daily catch is filled, the boats go directly to the dock and are unloaded into refrigerated trucks. Within hours, all of the scallops are shucked, cleaned, and blast frozen at state-of-the-art facilities nearby.

Considered an aqua-farmed fishery, juvenile scallops are caught outside of Sechura Bay, placed in the zones, then allowed to grow naturally in these nutrient-dense waters. You will truly enjoy the uniqueness of the natural, Diver-Caught Bay Scallops. Try them for yourself!

Nice catch!!!

So far... so good. I'm originally from Peru, so I know about seafood. One of our many traditional dishes is made with Scallops. I tried your Scallops on this dish and I am very confident to say it was a success. Thanks so much.

I am sold!

I had been purchasing my fish from another company for many years. They recently sold out to "Corporate America", raised prices, and immediately did away with many of the products I regularly used. I started shopping and decided to give Knowseafood a try. I am now on my second order and everything I have had thus far has been just wonderful. I grew up fishing on Lake Erie, moved to Colorado and continued the hobby there. I know fresh fish and the fish I have received has all tasted fresh and clean. I used the Aurora Salmon in poke bowls last night and they were outstanding. Tonite was Cobia burgers which cooked in eight minutes in the air fryer. They were sweet and flavorful and how can you beat good in eight minutes? We have enjoyed the Mahi Mahi and the Lingcod, which I had never heard of, made the best fish tacos. I have not had time to try the scallops as I have been so busy trying everything else, but I know they will be wonderful. I still have a freezer full of fish and when I get low, I will be ordering again because I am sold!

That's the only way to describe how spectacular these "sea" morsels are. They explode with taste and make you want to ask for more. Unfortunately, we ate the all.

Diver Caught Bay Scallops

Since moving to NC, I've been unable to find some of the seafood I was used to in MA. I was happy to discover KNOWSEAFOOD and I took a chance. The Diver Bay Caught Scallops arrived well-packaged and frozen solid. In the morning I took out the amount I needed and put them in a colander over a dish in the refrigerator. I covered them with a paper towel to soak up any moisture as they thawed. They appeared fresh and had no odor. I pan-fried them and they were delicious. Next I plan to make a scampi with the scallops and the amazing shrimp that were also from KNOWSEAFOOD.
