  • ½ cup grated Parmesan cheese
  • ¼ cup panko breadcrumbs
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon lemon zest
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil (for pan or baking sheet)

Step-by-Step Process for Cooking

  • Step 1: Preheat oven to 400°F (200°C) or set skillet over medium heat if pan-searing.
  • Step 2: Pat dry the halibut fillets with paper towels; season with salt and pepper.
  • Step 3: In a bowl, mix Parmesan, panko, garlic powder, and lemon zest.
  • Step 4: In a separate bowl, combine mayonnaise and Dijon mustard.
  • Step 5: Spread a thin layer of the mayo-mustard mixture on the top of each fillet.
  • Step 6: Press the Parmesan mixture firmly onto the coated side of each fillet.
  • Step 7: If baking, brush a baking sheet with olive oil and place fillets crust-side up. Bake for 12–15 minutes, or until the crust is golden and the fish flakes easily.
  • Step 9: If pan-searing, heat oil in a nonstick skillet. Place fish crust-side down and cook for 3–4 minutes until crust is golden. Flip and cook another 3–5 minutes, depending on thickness.
  • Step 10: Garnish with chopped parsley and serve with lemon wedges.

  • 2 tbsp Dijon mustard
  • ½ cup grated Parmesan
  • 2 tbsp olive oil
  • Salt & pepper

  • Step 1: Heat skillet over medium.
  • Step 2: Season fillets; spread mustard on top.
  • Step 3: Press Parmesan onto the coated side.
  • Step 4: Sear crust-side down for 3–4 min, flip and cook 3 more min
  • Step 5: Preheat your oven to 425°F (220°C). Lightly grease a baking sheet or line it with parchment paper.

3. Air Fryer Parmesan Crusted Halibut

  • 4 halibut fillets
  • ¼ cup Greek yogurt or mayo
  • ½ cup Parmesan
  • ¼ cup breadcrumbs
  • Salt, pepper, garlic powder

How to Cook

  • Step 1: Preheat air fryer to 390°F.
  • Step 2: Mix yogurt and garlic powder; spread on fillets.
  • Step 3: Add Parmesan and breadcrumbs on top.
  • Step 4: Air fry for 10–12 minutes until golden and crispy.

  • 4 halibut fillets
  • 2 tbsp olive oil
  • ½ cup Parmesan

  • Step 2: Brush fillets with olive oil; season.
  • Step 3: Sprinkle Parmesan and herbs on top.

  • Oven Method: Preheat to 350°F (175°C) and place the fish on a baking sheet. Reheat for about 10 minutes, or until warmed through.

  • Air Fryer Method: Heat at 350°F for about 5–6 minutes. This is my favorite way because it brings the crust back to life without drying out the fish.
