Thawing frozen seafood properly is significant not only to ensure the quality of the seafood but also to prevent health risks. For example, all of our seafood has a protective glaze of water to prevent freezer burn-in to ensure quality. Once thawed, gently pat away any excess moisture from the glazing as soon as possible.

We recommend that you follow the USDA’s instructions on safe food handling, which can be found here. We also recommend that all cooking instructions are followed and that you use a food thermometer to ensure that all seafood and other applicable items are cooked to the USDA’s recommended internal temperatures, which can be found here.

Here are a few simple ways how to defrost:

The Refrigerator Method

It might be the longest, but thawing seafood in the refrigerator is undoubtedly the safest way to thaw any protein such as seafood. It also protects the quality of the seafood, providing the best quality-control method. For example, for our Individual Frozen Portions (IFP) or Individually Quick Frozen (IQF) bags like our shrimp and scallops, it can take up to 12- 24 hours to thaw. Please remove from the original package, plate, and cover, or at a minimum, puncture the plastic packaging. Once melted, seafood lasts up to three days in the original packaging. Do not refreeze after thawing.

The Water Method

Here’s how it works:

IFP Portions: Place the seafood in a bowl of cold water (not warm or hot as that starts the cooking process) in the kitchen sink. Change the water now and then or place a constant drip/spray of water to control the temperature. Check the seafood after one hour – it should be fully thawed by then. Cook immediately after thawing.

IQF bags:

Place the desired quantity of seafood (scallops/shrimp) that you will use into another resealable bag.Replace unused IQF seafood immediately back into the freezer.Submerge the sealed bag in a bowl of cold tap water.Let the bag sit in the water until it’s completely thawed, changing the water every 30 minutes, if necessary.

We don’t recommend running under cold water outside of the bag. Cook immediately after thawing.

The Microwave Method

Not always the favorite way, but it’s fast, and the microwave method is undoubtedly the quickest of the three. Still, it’s the least preferred method to preserve the seafood’s quality. But if you forgot to take it out of the freezer and are in a hurry, here’s what you do: make sure you puncture the plastic before placing it in the microwave. Use the “Defrost” function and set the time according to weight. Cook immediately after thawing.

Delicious!

I don't think I've ever had cobia before, and wasn't sure what to expect. It turns out that it's pretty darn tasty! That KnowSeafood's products are the highest quality is a given, so let's discuss the actual nitty-gritty of the product itself. In terms of texture, the cobia patties were firm, but not as meaty as haddock. They flake when cooked to doneness, but doesn't completely disintegrate like a thin fillet of tilapia. Taste-wise, it definitely tastes like a fish, but the "fishy" taste is in the medium range, I think. There are some fish whose taste is (relatively) subtle, and others that just scream "I LIVE IN THE SEA". On a scale of 1 to 10 (10 being the most fishy), I think I'd place cobia around 6, maybe 6.5, depending on how you eat it. Speaking of which, since the cobia has a very subtle nutty flavor, I recommend that you eat this as a standard fish burger, but put more emphasis on fatty compliments. I had mine with crisp butter lettuce (the crispness is a nice contrast to the meatiness of the fish), with pickles, Sir. Kensington sauce/mayo combo, red onion, and an avocado, all on a generic toasted white bun. I think a sourdough bun would work even better.

Tried to like these

Clearly it is a quality product. However the taste was not to our liking. We really tried to like them. Prepared them several ways , but could not get past an odd flavor. The egg white and potato starch and vinegar gave it a slight weird flavor. Sorry. Perhaps change the sunflower oil to olive oil or grape seed and the vinegar to lemon juice. Instead of potato starch, perhaps finely grate potatoes

I have never have Cobia fish until the other night. The Ocean Blue Cobia Burgers were amazing. I cooked it in a little extra ****** olive oil and served it over a large salad. I topped it with a delicious horseradish sauce. I will order these again. Everything I've order has been perfect.

Amazing

This was delicious! I cooked this on an indoor grill and then made a burger out of it. I’m upset I didn’t buy this sooner. It’s that good.

These will surprise you!! They did for me.

Ok, Paul says "how about Cobis Burgers? I said what? I have never had a cobia burger (truthfully didn't know they existed). He said you have to try them, just like I told him to try the Black Cod. So I did. WOW! I put them in the air fryer from FROZEN and flipped them once. Then onto a brioche bun, with some mixed greens and some garlic aioli. I'm a fan. Next time, I cooked them in the air fryer just enough so I could take them out and break them apart. Onto a tray of al dente cooked asparagus, some drizzle of XVOO, some S&P to taste, sprinkle some grated parmesan, they under the broiler for a few minutes. Even my very fussy brother-in-law ate them. So go play with your food!!! Try these!
