This quick bay scallop recipe can pair well with the vegetable of your choice or served over pasta!

Ingredients
-
1 1/2 pounds bay scallops
1/2 cup all-purpose flour
3 to 4 tablespoons extra virgin olive oil
2 garlic cloves, minced
salt and pepper to taste
lemon wedges and chopped parsley for garnish
Directions
Rinse the scallops thoroughly with cold water and pat them dry with paper towels.
Put the flour in a shallow bowl; roll the scallops in the flour.
Heat the olive oil over medium-low heat. When the oil is hot, add the scallops and cook for 90 seconds, stirring frequently.
Add the minced garlic, salt, and pepper and stir to blend. Continue to cook and turning for about 1 1/2 to 2 minutes longer.
Garnish the scallops with chopped parsley and serve with lemon wedges, if desired.
Serve with hot cooked pasta or rice along with sautéed spinach or Swiss chard.
