Ingredients

1 Portion of Black Cod
1 serving of udon noodles
4 oz. mushrooms (brown beech pictured)
2 to 4 garlic cloves
2 tbsp of rice wine (mirin)
1 tbsp of soy sauce
1 cup of water
½ of a shallot
3 to 4 dried szechuan chilis
chives for garnish
sesame oil for cooking
Directions
Step 1: Slice garlic, clean mushrooms, and thinly slice ½ of a shallot. Set aside.
Step 2: Toast szechuan chilis, then add 1 cup water, 2 tbsp rice wine (mirin), 1 tbsp soy sauce, ½ of your garlic and the shallots. Bring to a boil, then let it simmer on low off to the side until you are ready for it.
Step 3: Saute your mushrooms and the rest of the garlic in sesame oil.
Step 4: Start your udon noodles and cook per package instructions.
Step 5: Remove the mushrooms and garlic from the pan when they are starting to turn brown. Add a bit more sesame oil and start your Black Cod skin side down. Cook 3 minutes or so on each side.
Step 6: Strain the noodles and put into a shallow dish with the mushrooms and garlic. Gently place the cod on top. Then, using a strainer, pour your sauce over the top.
Step 7: Garnish with a bit of green onion.
Step 8: Enjoy!

You can also try some crushed chili flakes and sesame seeds. Drizzle a bit of toasted sesame oil over the fish before eating for an extra rich experience. Don't be sad if your skin sticks. Ours did too! Scrape off the crispy bits and use as a garnish!
