Ingredients

2 salmon fillets
2 T mayo
2 T soy sauce
1 - 2 T furikake seasoning (available in Asian food markets and well stocked grocery stores)
2 lbs Brussels sprouts, trimmed and halved
1 T Olive Oil
2 T soy sauce
1 T maple syrup
1 T rice vinegar
2 T sesame oil
1 - 2 T sriracha (more or less to taste)
Two packets of Lotus Foods Ramen with Miso Soup, prepared as directed.

Preheat oven to 400 degrees
BRUSSELS SPROUTS: Toss Brussels sprouts with 1 T olive oil and season with salt and pepper. Roast until almost tender, 20 minutes. While Brussels sprouts cook combine remaining Brussels ingredients to make sauce. Toss Brussels with sauce and return to oven to caramelize and absorb sauce, another 8 - 10 minutes, tossing once.
SALMON: place fillets on parchment lined pan, skin side down. Combine mayo and soy sauce in a small bowl. Spread evenly on flesh side. Sprinkle furikake over mayo coated salmon evenly. Roast alongside Brussels sprouts for 12 - 15 minutes until fish is just cooked through.
ASSEMBLE: divide cooked ramen and broth between bowls. Top with Brussels sprouts, and salmon. (Try to keep salmon out of broth so it doesn’t lose its crispy coating.) Serve with pickled ginger.
