Ingredients
-
2 portions of Norwegian Skinless Salmon
1 celery stalk
3 green onions
3 to 4 garlic cloves
1 quart fish stock
3 strips of bacon
½ red pepper
4 to 6 small yukon gold potatoes
1 cup heavy cream
salt and pepper to taste
2 large bread loafs (optional)
Directions
Step 1: Chop the onion, red pepper, and celery into a small dice and set aside in a bowl.
Step 2: Cut the Norwegian Salmon into 1-inch bite-sized cubes.
Step 3: Dice your potatoes into ½ in cubes.
Step 4: Dice the bacon and brown in the soup pot. (If your bacon is lean, you can add a bit of olive oil as needed.) Once it just starts to crisp, remove it and set aside.
Step 5:Add your onion, pepper, and celery to the bacon grease. (Again, add oil as needed.) Cook until they are tender, and add pressed garlic. Cook for another 30 seconds to a minute.
Step 6: Add the stock and potatoes. Simmer on medium for 15 minutes until the potatoes are soft.
Step 7: Add the bacon and the salmon. Let it cook for a minute or two, then add the cream.
Step 8: If you prefer a thicker soup, you can add a slurry, which is equal parts flour and water or milk. In this recipe, 2 tbsp each should be good. Stir until it thickens for at least a minute after it starts to simmer.
Step 9: Serve in bread bowls garnished with fresh parsley.
Step 10: Enjoy!
