Salmon with Kale Apple Walnut Salad
2 apples in cubes
4 handfuls of kale
40 walnut kernels
0.5 juice of ½ a lemon
0.5 tsp salt
5 pinches of black pepper
2 tbsp olive oil
Fry the salmon on low heat in a frying pan.
Mix the kale, walnut kernels and apples and add the juice from half a lemon. Add salt, black pepper and olive oil. Mix the salad well and leave for 20 minutes.
Add the salmon just before serving.
