Ingredients

2 Maine Lobster Tails

6 Scallops

4 Shrimp
1 Lemon
3 Tbsp. Butter
2 Garlic Cloves
½ Red Onion
2 Tbsp. Chopped Parsley
Olive Oil (As Needed)
3 to 4 Slices of Bread (Toasted)
Directions
Step 1: Start by prepping the lobster. You will need to cut out the underbelly and gently pull out the lobster. You can leave the tail attached.
Step 2: Mince up the scallops and shrimp.
Step 3: Prepare the bread crumbs. You will need 1 cup.
Step 4: Dice 1/2 onion and parsley or cilantro.
Step 5: Drizzle enough oil in a skillet on medium heat to just cover the bottom, then saute the onions until they are translucent.
Step 6: Add in the pressed garlic, cooking for another 30 seconds.
Step 7: Add the shrimp and scallops and cook for about a minute.
Step 8: Toss in the butter and juice from 1 lemon. As soon as the butter is melted, remove from the heat and add to a bowl with the bread crumbs.
Step 9: Toss in the parsley, salt and pepper to taste, then mix it all together with shredded parmesan.
Step 10: Divide the mixture and heap it into each lobster tail. You can make a small tinfoil boat for each tail so they sit upright in the oven.
Step 11: Bake at 400° for 18 to 20 minutes. The internal temp of the lobster should be 145°
Step 12: Let cool and enjoy!
